Hearty Kale Bean Soup

Hearty Kale Bean Soup 

6-7 cups water

5 cups black beans or beans of your choice (pre-soaked and rinsed)

2 large potatoes (cubed)

2 carrots (chopped)

6 cups chopped kale

7 celery stalks (chopped)

1/2 parsnip (peeled)

1/2 yellow onion (chopped)

1 bay leaf

2 vegan bouillon cubes

Place water and beans into a large pot and cook on low for about 1 1/2 hours until the beans begin to soften. Add potatoes, carrots, celery, parsnip, onion, and bay leaf, and simmer on low for another 30 min. Stir well. Add vegan bouillon cubes and chopped kale last and simmer on low for another 20 minutes. Stir well and serve. Enjoy.
