Split Pea Coconut Sweet Potato Soup

3 cups split peas (rinse well)
9 cups water or veggie broth
14 oz light coconut milk
1 sweet potato (peeled, cubed)
3 organic vegan bullion cubes

Place all ingredients in a pressure cooker (I used Instant Pot). Set for 35 minutes. Allow to cool before eating. If you don’t have a pressure cooker, you can still make this soup in a closed lid pot. Place all ingredients in a pot, set temperature on low-medium and keep an eye on the contents as they’ll need stirring often. Cook for about 1 hour or until the split peas are very soft. Allow to cool slightly before eating. Enjoy!
